No-Bake Lemon Cheesecake-Easy Recipe

WHAT YOU NEED

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • A pinch of salt

For the Filling:

  • 450g cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup heavy cream
  • 2 tbsp Vibgyor Lemon Lime Artificial Flavoring

For the Topping:

  • Lemon slices for garnish
  • Whipped cream (optional)

 

INSTRUCTIONS

Prepare the Crust:

  • In a medium-sized bowl, combine graham cracker crumbs, melted butter, granulated sugar, and a pinch of salt.
  • Press the mixture into the bottom of a 9-inch springform pan, creating an even layer.
  • Place the crust in the refrigerator to set while you prepare the filling.


Make the Filling:

  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Add powdered sugar and Vibgyor Lemon Lime Flavoring. Mix until well combined. If you want to give it a more sunny yellow color, you can even use Vibgyor’s Lemon Yellow food coloring.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  • Pour the filling over the chilled crust and spread it evenly.

 

Chill the Cheesecake:

  • Cover the springform pan with plastic wrap and refrigerate the cheesecake for at least 4 hours or overnight to allow it to set.

 

Garnish and Serve:

  • Once the cheesecake is fully set, carefully remove it from the springform pan.
  • Garnish with lemon slices and a dollop of whipped cream if desired.
